The killer in potato sprouting is a substance called dragon anthrophyll, which is a toxic alkaloid, which is eaten by people with mild nausea, vomiting, diarrhea, and severe heart failure and paralysis of the respiratory center, resulting in death.
In fact, normal potatoes also contain agaricin, but the content is very low and will not cause harm to the human body.
And when potatoes begin to sprout and turn green, potatoes will produce a large amount of longalin, which is 50 times that of normal potatoes, which is "highly toxic" to the human body. If you eat 200 mg of longanthrin at a time, about 30 grams of potatoes that have turned green and sprouted, symptoms of poisoning can occur in 15 minutes to 3 hours.
Can sprouted potatoes be eaten?
First of all, sprouted potatoes are not recommended to eat. I really don't want to waste, for a small amount of potatoes that sprout, there are still ways to sprout a sign.

Which sprouted foods have reduced nutritional value?
ginger
Although ginger sprouts are not poisonous, nutrition is greatly reduced. So if you find that ginger has buds, you must use it as soon as possible.

onions
