Ingredients: 2 small packets of Hsinchu rice noodles, 50 grams of pork tenderloin, 30 grams of cabbage (cabbage), 1 egg, 20 grams of carrots, 20 grams of leeks, 20 grams of shiitake mushrooms
Seasoning A: 1/2 tbsp light soy sauce, 1 tbsp cooking wine, 1 tsp corn starch, 1 tsp salad oil
Seasoning B: 1 tbsp light soy sauce, 1/2 tsp broth (or water) each, 1 cup salad oil, 2 tsp
Preparations:
Pork, cabbage, carrots and shiitake mushrooms are washed and finely shredded; leeks are washed and cut into sections; eggs are beaten and fried in a pan to form egg skins and finely shredded.
1. Put the rice noodles in a basin and soak in cold water for half an hour.
2. Put the shredded pork into a bowl, add seasoning A to grasp and mix well, marinate for 15 minutes.
3. Heat the pan in oil, sauté the pork and set aside.
4. Heat the pan in oil again, add the shredded shiitake mushrooms and stir-fry until fragrant, then add the shredded cabbage and stir-fry slightly.
5. Add rice noodles, carrots and leeks and stir-fry well. 6. Add broth (or water), add soy sauce, salt, sugar and chicken essence.
7. When the water is dry, add the fried egg skin and the sautéed meat, and stir-fry well.
8. When stir-frying, it is best to use chopsticks, do not use a spatula, so as not to break the rice noodles.
Production tips
When stir-frying rice noodles, put a little more oil to taste good. When stir-frying, shredded carrots and leeks can also be put together with shredded egg skin and shredded meat, so that it is more refreshing to eat. If you can't buy Hsinchu rice noodles, you can use other rice noodles instead.
