West Lake beef soup, is deeply loved by the people of Jiangnan famous dish, it is cheap, only use beef, mushrooms and tofu, the amount is not much, but rich in nutrition, can be called high-quality protein "concentration camp"; it is simple, but it is to throw the material into the pot to cook, hook, beat egg flowers only; it tastes delicious, rich in taste, smooth and appetizing... A bowl in spring and summer is an absolutely good soup!
Ingredients: Lean beef, enoki mushrooms, tofu, egg whites, chicken soup, water starch, salt, sugar, pepper, coriander.
Procedure steps:
Step 1: Finely chop the beef into granules, the finer the better;
Step 2: Add a little water to dissolve;
Step 3: Sit in the pot with water, boil and add the beef grains, boil and fish out for later;
Step 4: Wash the mushrooms in advance and soak them in cool water for more than 4 hours;
Step 5: Wash and chop;
Step 6: Cut the southern tofu into small cubes and set aside;
Step 7: Break up the egg whites and set aside;
Step 8: Chop the parsley and set aside;
Step 9: Add soup to the pot;
Step 10: After boiling, add the diced tofu;
Step 11: Add chopped mushrooms and minced beef;
Step 12: Bring to a boil again and add a little salt and sugar to taste (use salt sparingly, the soup is salty)
Step 13: Add freshly ground pepper and season;
Step 14, after boiling again, a small amount of water starch is transferred many times to bring out the concentration you like;
Step 15: Bring to a boil again, turn off the heat and beat the egg whites and stir in the same direction;
Step 16: Finally, add a little chopped parsley and you're good to go.
Tips:
1, beef grains before blanching water with cool water, you can avoid blanching water is beef grains into a ball; 2, you can use other mushrooms. I was supposed to use grass mushrooms, but I didn't buy them, but it was good to use enoki mushrooms. 3, egg whites should be turned off after the heat is beaten, you can adjust the faint flocculent, and the taste is smoother. Rest assured, the soup is hot enough to blanch the egg whites. 4, I put a few goji berries, only for the color to look good, not necessary. However, it is also good to eat more goji berries this season.
