The first:
1: Recipe
1 kg of sesame seeds, 5 pounds of starch, 5 kg of water.
2: Raw material handling
First of all, the sesame seeds are washed with water, and then a part of the above raw material water is ground into a pulp with a refiner, and then the remaining water is mixed in, and filtered with a fine gauze cloth to remove the slag and obtain a filtrate - sesame juice.
3: Thermoforming
Take 60% of the above obtained sesame juice, add starch, mix well and stir evenly, then heat, require heating while stirring, until it is a translucent paste, stop heating, and then add the remaining 40% sesame juice while stirring, after full stirring, respectively, into the packaging bag made of heat-resistant synthetic resin, discharge the air in the bag and seal, put it into the steamer, steam it for 30 minutes at a temperature of 100-105 degrees, and then remove the sesame tofu after cooling.
The second type:
Sesame seeds 40 g, sesame oil 40 g, soybeans 7 kg, water and coagulant to taste.
Wash the soybeans with water, pour them into a jar and soak them in water for more than 6 hours, grind the pulp after fishing out, pour the sesame seeds into the pot and fry them, mash them and mix well with pure sesame oil.
3) Tofu is formed
Take 10 kg of soy milk and mix the liquid and stir well, add an appropriate amount of coagulant, and then make tofu according to the conventional method.
