Practice steps
1. Dried bamboo shoots are soaked one day in advance. Beef brisket in a pot of cold water, put cooking wine in the water, remove the blood water, fish out and rinse well and set aside.
2: Heat the oil in a hot pan, sauté the beef brisket for 2 minutes, add rock sugar.
3: Add ginger, 2 white shallots, 6 garlic cloves and sauté until fragrant. Add all the ingredients in the spices and sauté to bring out the flavor.
4: Add 2 tablespoons of watercress sauce and 1 spoonful of soy sauce and stir-fry evenly. Then add 1 tablespoon of flower carving wine and stir-fry to bring out the aroma.
5: Add boiling water that has been boiled in advance, bring to a boil, pour into a pressure cooker, add 2 tsp of salt. Then add the soaked dried bamboo shoots.
6: After pressing the pressure cooker for 20 minutes, add 1 small spoon of salt and a small amount of old vinegar after unloading the pressure, and continue to cook for 5 minutes.
7: Boil the noodles, put the noodles into the soup after cooking, spread the beef noodles, sprinkle with spring onion flowers and coriander leaves.
