"Sending guest dishes" may be ball soup, may also be egg soup, ball soup generally appears in the Shaanxi area, the meaning is "finish"[1], egg soup is generally found in Henan area, there is a joke called "egg soup", conscious of the end of the dish.
Rural banquets in the south are generally more greasy, and the last "send-off dish" is usually sweet soup.
