This dish is not very old, and is said to have originated in the night market stalls of Guangdong before liberation. At first, it was steamed with a bowl covered with ingredients, but the clever stall owner found that this was not very convenient, so he cleverly replaced it with lotus leaves, and he did not expect that his thought of it at this moment actually made the dish more delicious. 【Lotus leaf glutinous rice chicken】(11 pieces)
❶ Glutinous rice and marinating ingredients: 560g glutinous rice, about 2g salt, 1 spoonful of dark soy sauce.
❷ Chicken thighs and marinade ingredients: 500g chicken thighs, about 4g salt, 1 spoonful of dark soy sauce and light soy sauce, 1/2spoon of allspice powder, 1/2 spoon of sugar, green onion, ginger slices.
❸ Shiitake mushrooms and marinade ingredients: 6 shiitake mushrooms, about 1g of salt, 1/2 spoon of dark soy sauce, light soy sauce, and green onion.
❹Other ingredients: chestnuts, potatoes, carrots, onions, lotus leaves.
Here's how:
Step 1.
A pound of chicken thighs plus ingredients marinate for more than two hours, overnight marinating is better. If it is hot at home, it is best to put it in the refrigerator for refrigeration and marinade.
Step 2.
Remove the stem of the shiitake mushroom and cut it in half, if the shiitake mushroom is large, it can be cut into three or four pieces. Marinated with spices.
Step 3.
The lotus leaves are cut according to the size you need, or buy a lotus leaf for the lotus leaf chicken is square.
The lotus leaf I bought was medium sized, one cut in four pieces. (Don't look at the size on the photo, this cut is small).
Wash the cut lotus leaves, bring water to a boil in a pot, add half a spoonful of salt, and put the lotus leaves in and cook for about eight minutes. Drain and let cool.
Step 4.
When the glutinous rice is soaked in water six hours in advance, let the glutinous rice drink enough water, and when it is soaked for five hours, pour the water to almost flush with the glutinous rice, put salt and soy sauce, mix well, and marinate. Put cold water in the steamer, spread gauze on the beams of the pot, pour the glutinous rice on it, and then poke the pit with your hand, so that it is cooked.
After the water is boiled, the steaming is about 20-25 minutes, and the glutinous rice can be done without a white core.
Step 5.
Potatoes, onions and carrots cut into small pieces. Heat the oil in the pot, put the onion in the hot pan cold oil to fry the aroma, put on the extremely fresh taste, then put the carrots and potatoes into it and stir-fry well, turn off the heat.
Step 6.
Take a piece of lotus leaf, smooth side up, first put a thin layer of glutinous rice, on top of which is a piece of chicken thigh meat, a piece of shiitake mushrooms, a spoonful of sautéed potatoes, one or two chestnuts, and spread another layer of glutinous rice on top of the vegetables.
It is best to wet your hands or wear gloves to prevent sticking when putting glutinous rice. (Don't look at my lotus leaf size, this is the small one)
Step 7.
Wrap the lotus leaves tightly at the bottom and wrap all the ingredients. I packed a total of 11.
Step 8.
Put more cold water in the steamer, put the wrapped glutinous rice chicken on the beam of the pot, put the pot in cold water, and steam for about 30-40 minutes after opening the pot.
