Main ingredients: 2 pig's trotters, 1 piece of curd milk, green onion, ginger slices, star anise, peppercorns, fragrant leaves, cinnamon, rock sugar, soy sauce, soy sauce, oyster sauce, cooking wine, salt, chili pepper, cooking oil, shallot garnish
Production process:
1, the purchase of 2 front pig trotters let the salesman help chop into several sections, after returning home with water soaked, replaced the water twice.
2, after the pig's trotters are cleaned, cool the pot under water, pour in the appropriate amount of cooking wine and a few slices of ginger, after the water boils, there will be many foam, use a soup spoon to skim off all the foam, cook for a few minutes and turn off the heat.
3. Put the pig's trotters in warm water and wash them.
4. Prepare all seasonings.
5: After the wok is heated, pour in the appropriate amount of cooking oil, melt the rock sugar with low heat, and when it becomes jujube red, fry the dried pig's trotters with water control.
6: Then add shallots, ginger slices, star anise, peppercorns, fragrant leaves, chili peppers and stir-fry until fragrant, pour in the appropriate amount of soy sauce, dark soy sauce, oyster sauce, cooking wine and salt, stir-fry evenly.
7: Set the electric pressure cooker to high heat, add water to heat, put a piece of curd milk in, and crush it with chopsticks. Stir-fry the pig's trotters evenly in a wok and pour into an electric pressure cooker. This piece of curd is the seasoning I'm talking about.
8: Cover the pot, press the start button, and keep warm for 30 minutes to 40 minutes. It can be based on personal preference
Adjust the time of holding. I like to eat soft and rotten for a while, and like to eat the Q bomb less for a while. Time arrives to hit
Turn on the lid of the electric pressure cooker and use chopsticks to clip the pig's trotters into the dish piece by piece.
