Traditional box (cup) cakes use light cream, but this time hippos boldly abandoned the conventional practice, because eating light cream in the summer is not always refreshing enough, so special milk sauce and coconut mango sauce were made.
Whether it's cool milk sauce or ice-sweet coconut mango sauce, whether it's served with fruit, or cocoa powder and coffee liqueur, every flavor is delicious enough to lick a cup (box).
And the production is very simple, 5 flavors, made at once :) is suitable for eating yourself, but also super convenient to send friends. I use 6 small cups, and you can use the box.

The recipe is as follows.

4 eggs
Low gluten flour 50 g
Milk 50 g
Corn oil 30 g
60 g caster sugar
Lemon juice 1 g
⭕ Cow's milk sauce
Low gluten flour 10 g
Cornstarch 15 g
Sugar 40 g
2 egg yolks

————— Part I: Making Cake Embryos—————
First of all, the egg yolk protein is isolated and the egg white is refrigerated first.
Add the egg yolks to the corn oil and stir well to make it emulsify in place.
If the milk is refrigerated, warm it up first, add the milk to the egg yolk in 2 times, and stir well each time.
Sift in low gluten flour and gently stir well.
Add 60 grams of caster sugar to the egg whites three times and whip until wet foaming.
⭐ The timing of adding sugar is: the first time is to send the large bubbles to add sugar; the second time is to send the large bubbles to become delicate and small bubbles to add sugar; the third time is to add sugar when the lines appear.
⭐ Wet foaming is a guarantee of cake softness. The beaten egg head has a long curved hook, like a bird's beak that is, wet foaming; neutral foaming is a shorter small curved hook; dry foaming is a short upright sharp angle with no curvature.
Scoop 1/3 of the egg white and egg yolk paste and mix well with egg pumping, turning the beaten egg bowl while mixing.
⭐ When pouring egg yolk paste, because the egg yolk paste has been left for a while, first stir the egg yolk paste again before operating.
Then pour the mixed batter into the remaining protein and stir well with a silicone spatula.
⭐ Be sure to stir the method and mix evenly, otherwise a pudding layer will appear.
⭐ No defoaming when mixing is the guarantee that the final cake has thickness and no pudding layer. QiFeng mixing method from Teacher Koshima: the right hand uses a silicone scraper blade to enter the knife at the center point of the basin, mix it to the lower left, and then turn out the protein, back to the center point, which is basically an oval line. When stirring, the wrist does not move, the spatula does not need to be turned, and it is always flat. At the same time, the left hand rotates the basin counterclockwise from 9 to 7 o'clock.
Frequency: about 2 times per second, and finally mixed 35 to 45 times in 20 to 25 seconds.
Pour the batter from a high place into a baking sheet, scrape flat, and knock 3 times to shake out small bubbles, the surface bubbles can be broken with a toothpick. Place in preheated oven at 175°C for 22 minutes.
The baked cake embryos are taken out of the oven and shaken, the heat is shaken out, and they are upside down on the cooling rack.
————— Part II: Making Milk Sauce—————
1, first beat the egg yolks and sugar with an egg beater until white.
⭐ Be sure to send it to whitening. Otherwise, it is easy to agglomerate when heated later.
2, then sift in the low gluten flour and corn starch, stir well to form a flour paste.
3, Heat the milk at low temperature for a while, then pour in the flour batter twice, stirring well each time.
⭐ If vanilla flavor is desired, just add a few drops of vanilla essence to the milk.
4, Sift the flour paste and heat it on high heat. Turn on low heat and stir with egg pumps as heat.
⭐ Be sure to sift the flour paste, otherwise it will be easy to agglomerate.
⭐ It is necessary to reduce the heat + stir constantly.
⭐ As soon as signs of agglomeration are found, immediately remove from the heat and stir with egg pumping until the small particles amellate.
5, Wait for the liquid to be boiled until it is viscous and delicate, and the lines can be filled.
6. Add the cream cheese that has been softened to very smooth at room temperature while hot and stir well. The milk sauce is ready.
7: Cover the cooked milk sauce with plastic wrap and refrigerate for use.
———— Part III: Make Coconut Mango Sauce————
Crush the mango meat into a puree shape and set aside.
Coconut milk, milk, condensed milk, sugar and butter are mixed into a small pot, bring to a boil and remove from heat.
Sift in a pan with cornstarch. Stir until free of particles. Then cook over low heat. Stir as you cook. Cook until thick and grainy.
Add the mango puree, stir well and place in a pouch of mounting flowers. Refrigerate and set aside.

Dice strawberries, mangoes and yellow peaches in advance.
Slice the lime, leave one slice for use, and squeeze out the juice for the rest.
Coffee liqueur poured on the plate. Prepare the cocoa powder.

Place the milk sauce in a garg. Cut the cake embryo to its own box size. Two pieces of cake are required for each box cake.
The assembly sequence is as follows -
1, first put a slice of cake embryo. Tiramisu-flavored box cakes are dipped in coffee liqueur and brushed with lime juice in lime-flavored box cakes.
2. Squeeze the cake preforms with cow's milk sauce and coconut mango sauce according to your preference. Drizzle with lime juice in lime peach flavored milk sauce.
3, put diced strawberries / yellow peaches / orio crushed / sieve cocoa powder on top of the milk sauce, and put diced mango on the coconut mango sauce.
4. Squeeze in the milk sauce and coconut mango sauce respectively. Also drizzle with lime juice in lime peach flavored milk sauce.
5. Put on the cake embryo. The same tiramisu flavored box cake needs to be dipped in the cake liqueur first. Brush lime juice on a lime peach-flavored box cake.
6, then squeeze on the milk sauce and coconut mango sauce respectively.
7, Lime flavor put another slice of cake embryo, and then put on the lime slice, finished. Other flavors can be directly on top of the milk sauce and mango sauce with fruit/orio crushed/sifted cocoa powder.
The ice cream cake is ready. Take a bite with a spoon, soft cake preforms, cool and silky milk sauce/coconut mango sauce, cool through the tip of the heart. Refreshing fruit and lime juice, sweet oreo crumbles, strong coffee liqueur and cocoa powder, make people want to eat another box :)
