1. Soak the soybeans in water for about three hours in advance, peel the soybeans, and use the soy milk machine to add water to the peeled soybeans in a 1:1 ratio to crush the soybeans until there are no large particles.

Wash and cut the dishes you need to use into silk, about the size of a finger. (The dish can be cabbage, tender greens, tender pumpkin leaves, Shanghai green, etc., I usually use cabbage [smile])

Put the beaten soy milk into the pot, add the appropriate amount of water to boil over high heat, boil for about ten minutes, and then use gauze in a leaky basin (it can also be a basket), pour the boiled soy milk into it and filter it again, and clean out the okara of the gauze, so that the filtered soy milk makes the tofu taste better.

The filtered soy milk is put on the fire again and boiled, and then turned to low heat, then you can add the cut cabbage, add according to your favorite amount, but not too much, more will be made into lotus residue (lao four sounds).

When the cabbage is cooked, add the sour soup, slowly pour along the place where the water is boiling and bubbling, not too anxious (more tofu will be sour), and wait until you see the bean juice become clear.

Cover the finished vegetable tofu with gauze, add some weight with clean utensils and press it on it, about 20 minutes, and then the molding is completed.

Under normal circumstances, even if the fifth step is completed, I add the last step only to do it for the sake of good shape. At this time, as long as it is accompanied by homemade chili dipping water, you can eat it, which can be an oil dipping sauce mixed with peanut oil, or it can be a vegetarian dipping water, the kind without oil, and I personally prefer oil dipped in water [Yaya]

Special note, the first step if you don't want to be so troublesome, you can directly use soybean flour, and then stir the cold underwater pot evenly on the fire to boil, cook for about ten minutes and then filter is the same, add sour soup is to order tofu, so that the tofu is formed
