Why are they delicious?

After all, sticky grain is still a grain, and the main component of grain is starch.

So why is white rice also starchy, and it is not as sweet and soft as glutinous rice and yellow rice when chewed?

This is because starch can be divided into amylose and amylopectin according to the number and structure of glucose molecules in it.

Amylose molecules contain fewer glucose molecules, and the glucose molecules are arranged in a tight and orderly manner, and are not easily hydrolyzed.

The pullulan molecule contains more glucose molecules, and the structure between the glucose is like branch bifurcation, the joint is more loose, it is easy to absorb water in case of heat, and it expands into a paste. [1]

As you might have guessed, glutinous rice contains more amylopectin than regular rice (in fact, most of the starch in glutinous rice is pullulan), so glutinous rice is more likely to become fluffy and softer than rice at the same moisture and temperature.

(1) Family and friends share together, and harvest sweet when they see it, and there is more than enough every year.

(2) Before eating them, eat high-fiber, high-protein foods, such as vegetables and soy products, can slow down the rise in blood sugar. Chinese New Year's Eve rice in Jiangsu and Zhejiang regions makes some sense that babao rice is the last dish.
