The production method is also simple and easy to understand, a marinade: large porcelain jar poured into the well water, mutton, fresh lamb with bones, the skin surface is relatively folded and put, sprinkled with fine salt, glauber's salt, summer marinating for one to two days, spring and autumn marinating for three to four days, winter marinating for four to five days, marinating until the meat is red inside and outside. Two boiling: pour how much old brine soup, pour how much water, supplemented by peppercorns, star anise, cinnamon, cumin as the ingredient, high heat boiling, lamb under the pot, old and tender respectively, skin face up, and then boil open salt, then cover, wu fire simmer for four or five hours until the meat is rotten. Three fishing: skim the oil slick, press the fire to extinguish, simmer for half an hour until the soup temperature drops, use a long bamboo stick to pick the meat, put it into a porcelain plate. Four decants: Place the skin on a flat plate, pour the original soup several times, and then carefully dry it with a clean cloth.
