Chutney soup is something we often order when we eat in restaurants, as if each province has its own version of the chutney soup, which shows that it is very popular. It has a rich and thick taste, but it really has very little oil and low fat, and it can be used as a main course for a light dinner. Although the text part seems to be more numerous, the soup base only needs a few ingredients: black vinegar, white pepper, water and cornstarch. Its sour taste comes from vinegar. The spiciness comes from white pepper. No need for chili pepper or chili oil! Shiitake mushrooms, fungus, these most common ingredients give it the best taste. If you use dried shiitake mushrooms to work better, they have a strong smoky and woody flavor, which is very suitable for making soup bases. You can also replace pork with chicken or shrimp, or add sausages or ham to speed things up. It is important to add vinegar and white pepper after turning off the heat. 1 tsp of minced ginger

1 green onion

Vinegar 2 tbsp

1 tsp of ground white pepper

Water (or chicken broth) 3 cups (720ml)

Tofu 1/2 box (220g)

1/2 tbsp soy sauce

1.5 tbsp cornstarch

1/2 tsp of salt (or tasting)

1 egg

Sesame oil 1/2 tsp

1. After roughly rinsing, dry fungus foams, about 30 minutes to 1 hour. After softening, cut off the hard roots of the fungus and cut into small pieces. *There will be toxins in the fungus soaking for too long, and the soaking time should not be too long. *If you are using dried shiitake mushrooms, keep the water in which the shiitake mushrooms are soaked.

2: Wash and dry the pork tenderloin or chicken breast, cut into strips (or cut).

11: Mix cornstarch with 2 tablespoons (30ml) of water in a bowl and stir until starch dissolves. Slowly pour the starchy water into the soup in circles and stir until the soup thickens.

12: Add salt. Whisk the egg mixture again and slowly pour into the pan to allow the egg flowers to spread out without clotting. Turn off the heat and add the vinegar and pepper and stir well.

13. (Optional) Drizzle with sesame oil, stir and taste, according to your own taste to decide whether you need to add salt. Garnish with green onions or coriander leaves.

01. You can use dried shiitake mushrooms, the umami taste is stronger. 02. You can replace pork with chicken or shrimp, or you can add sausages or ham. 03.
