"Don't eat pickles and cured meats, carcinogenic."

In winter, there are often steaming marinated fish cured meats on the table, which stirs the taste buds of diners while containing nitrites. In this era when people talk about cancer discoloration, nitrites have become embarrassing street rats because they are carcinogens.

People are afraid of cancer, which directly or indirectly affects almost everyone's life. In 2020, there were 19.29 million new cancer cases and 9.96 million deaths worldwide. And with the intensification of the aging of the population, it is expected that the cancer burden will increase by 50% in 2040, when the number of new cancer cases worldwide will reach 30 million.

China is a cancer power. In 2020, China's new cancer cases reached 4.57 million, accounting for 23.7% of the world's total; cancer deaths were 3 million, accounting for 30% of the total number of global cancer deaths. The data looks like it is selling anxiety, but the fear of cancer is indeed one of the anxieties of ordinary people in our country, especially in recent years, cancer has gradually begun to show a trend of rejuvenation.

No one wants to "eat hot pot and sing, sip a sip of wine and then nag a few pieces of cured meat", and end up with cancer. Rick Woychik, director of the National Institute of Toxicology under the U.S. Department of Health and Human Services, said that carcinogen identification is the basis for preventing cancer.

Of course, cancer is not a simple "disease from the mouth", the causes of cancer can be divided into endogenous and exogenous two.

Cancer caused by endogenous factors such as genetics, immunity and endocrine is often caught off guard, but exogenous factors that can be seen, touched, and even tasted are what we can focus on.

For example, stomach cancer.

New cases and deaths of stomach cancer in China account for 44% and 49% of the world's total, respectively. Since in most cases, the detection of gastric cancer is intermediate and advanced, early diagnosis and early treatment have become a key to the treatment of gastric cancer. In recent years, a series of studies have shown that Helicobacter pylori significantly increases the risk of stomach cancer, and people have also found a variety of mechanisms for Helicobacter pylori to induce stomach cancer.

On December 23, 2021, the National Toxicology Program, part of the Department of Health and Human Services, released the 15th Report on Carcinogens.

note! These are also carcinogens!

In the new version of the Carcinogen Report, chronic infection with Helicobacter pylori is identified as a human carcinogen. The big problem is that Helicobacter pylori is the most common chronic bacterial infection in humans, accounting for more than 50% of natural bacterial infections worldwide. The infection rate of Helicobacter pylori infection in China is between 40 and 90%.

Since U.S. President Richard Nixon signed the National Cancer Act at the White House on December 23, 1971, pharmaceutical companies, scientists, clinicians, and patients around the world have joined cancer research. The Carcinogens Report aims to identify the environmental factors that cause cancer in humans, including chemicals, infectious pathogens, physical factors, and scene exposure (the report does not cover cancer risk statistics).

Compared with the 14th edition, this report adds 8 new carcinogens.

Chronic infection with Helicobacter pylori

Antimony trioxide

(Widely used in plastics, textiles and other chemical products)

Bromochloroacetic acid

Bromodichloroacetic acid

Chlorodibromoacetic acid

Dibromoacetic acid

Dichloroacetic acid

Tribromoacetic acid

(By-product of haloacetic acid after disinfection of tap water)
