Low gluten flour 60g

Unsalted cream 40g

2 eggs

1/4 tsp salt

Water 80ml

3g white sugar

Preparation steps:

Sift the low gluten flour and set aside.

Pour 40g unsalted cream, 80ml of water, 3g sugar and 1/4 tsp of salt into a pot, turn on low heat, stir while cooking, bring to a boil and then turn off the heat.

Pour the sifted flour into a pan and mix quickly. After the batter is completely heated (about 3 minutes), add the beaten egg mixture to the batter and stir well. It is recommended to use an egg beater at home to stir in an egg whisk until the whisk picks up the batter to show a curved hook-like consistency. Then put the batter in a squeeze bag and set aside.

Preheat the oven to 190°C, squeeze out the puffs of about 3 cm in circles on a baking sheet covered with baking paper, pull out the tip at the top at the end, and then put it in the oven!

Bake for about 25 minutes, then simmer for 5 minutes. After baking, remove and set aside (if you prefer a crispy texture, you can add a few more minutes to the baking time).
