Tofu with shallots
First of all, prepare about a pound of tender tofu, put it in a basin of water, wash a small handful of chives and set aside

The tender tofu is first cut into thin pieces with a knife, then cut into long strips, and finally cut into small cubes with a knife and put into a basin of water for later.

After the water comes to a boil, pour in the diced tofu, cook until the tofu is fully cooked, pour out the controlled water and cool.
After controlling the water, pour into the pot, add the green onion, add 5 grams of extremely fresh flavor, a little sesame oil, 5 grams of aged vinegar 3 grams of salt, and then mix well in the pot,
Mix well and place on a plate, then sprinkle with a little white sesame seeds to garnish.
