
Practice steps
1: Cut the old tofu into 1cm cubes
2: Bring to a boil in water and add a little salt. The purpose of adding salt is to make the tofu less fragile. As soon as the water boils, fish out the tofu, cross it with cold boiling water, and put it on a plate.
3: Finely chop the green onion and sprinkle on top of the tofu. Evenly sprinkle with a little salt, black pepper and a dozen grains of white sugar (the concept of a dozen grains is less than black pepper, mainly to improve the taste), put the chicken essence as you like, add a spoonful of salad oil to the pot, wait for the oil to be 90% hot, pour on the tofu and green onions, and then drop a few drops of sesame oil.
