Cake Base & Decoration:
Eggs: 3 Sugar: 65g Honey: 8g Vanilla Extract: 2g
Butter: 25g Milk: 40g Low flour: 90g
Pink pigment or toner or red yeast powder
First Floor · Strawberry cheese cheese layer:
Cream cheese: 200g Sugar: 35g Vanilla extract: 2g
Eggs: 1 lemon juice: 3 g Cream: 40 g Low flour: 6 g
Strawberry powder: 5g powder pigment to taste
Second Floor · Mascarpone Cheese Layer:
Fish film: 3 g Mascarpone: 150 g
Sugar: 25g Vanilla extract: 2g Light cream: 150g
1. Pink sponge cake
Eggs, sugar, vanilla extract, honey poured into the beaten egg bowl and beaten, and the beaten egg bowl is placed on hot water, while heating while stirring the ingredients to fuse until the liquid is heated to about 39.6 degrees.
Remove the egg mixture and heat and melt the bowl containing the butter milk in hot water, and remove when needed.
Immediately beat the egg liquid at high speed, the volume expands, and after the egg liquid is whitened, add pink powder, you can also add pink food coloring. (If you don't want to use pigments you can look down)
It is good to pull it up until it draws a clear pattern and does not disappear quickly.
Next, sift in the low powder and roll it evenly by turning it over. Note: If you don't want to use coloring, you can sift in 5g of red yeast powder or beet powder here.
Take out the butter milk liquid soaked in hot water, take a knife batter into the butter milk and stir well.
Then pour the mixture back into the batter and roll it well by tumbling.
Pour the batter into the mold and smooth it out, shake it a few times, and bake it in a 170-degree oven for about 30 minutes. This mold is 18cm in diameter, because you have to cut the edges later, if you don't use the trimming, you can directly use a 6-inch mold.
After baking, buckle upside down, tear off the baking paper and allow to cool completely. Cut the cake into a thickness of 1 cm, one piece as the bottom of the cake and the other as a cake decoration.
2. Level 1 · Strawberry cheese cheese layer
The softened cream cheese is smoothly stirred with egg whipping, poured with granulated sugar and blended.
First pour an egg, vanilla extract, lemon juice and stir well, then pour in the light cream and stir to combine.
Sift in low gluten flour and strawberry flour and stir well to make the strawberry cheese paste complete. It can not be replaced with red yeast powder or beet powder, but the taste will be slightly different.
Place the sponge cake in a 6-inch mold, pour in the strawberry cheese paste, bake in a baking sheet and bake in a preheated oven at 150 degrees for 25 minutes. Remove immediately after baking, cool to a greenhouse, and refrigerate.
3. Second Floor · Mascarpone cheese layer
Spread the mascarpone cheese in a pot, then pour sugar and vanilla extract and press and stir well.
Take the fish film that is soaked in advance and heat it in the microwave for ten seconds to melt (no microwave can be heated and melted in water) and pour into Mascapone to mix.
Whisk the light cream to 6 dispenses, pour in the mascarpone cheese liquid and stir well and set aside.
Remove the cake and use a spatula to make a circle on the inner wall of the mold for easy demotion.
If you like strawberries, you can put a few strawberries
Pour in the mascarpone cream cheese, not to pour it out, leaving a little of the sticker as a cake crumb. Smooth cover with plastic wrap and refrigerate for 2 hours.
4. Cake crumb garnish
Tear the pink sponge cake into pieces and sift through the cake with a sieve to form the cake crumbs.
Remove the cake and apply it to a hot towel to complete the demolding
Take out the macapone cream cheese just leftover and spread the cake over with a brush or spatula, which will act as a thickener.
Spread the crumbs evenly over the cake until they don't stick to them.
Finally smooth out with a spatula
