Make the crust
(1) 80G low gluten flour sifted and set aside.
(2) Add 130G milk, 65G butter, 1G salt to the non-stick pan, heat over medium heat, stir continuously with a spatula, and cook until the butter melts.
(3) Continue to heat over low heat until bubbling, turn off the heat and add sifted low gluten flour, quickly stir with a spatula until the dry powder disappears and becomes a batter with a uniform texture. (Stir quickly here, otherwise the dough will easily clump)
(4) Put the batter into an oil-free and water-free basin, cool it to the point of not being hot, add egg liquid to stir several times to ensure that the egg liquid is fully absorbed, I divided it 5 times. Stir with a hand blender until the batter is lifted in an inverted triangle.
(5) Put the batter into the framed flower bag, put the oil paper on the mold pad, squeeze half of the batter into the mold in a circle, lay flat, and bake at 200 degrees for 25 minutes.

Make lemongrass custard milk sauce
(1) Take a whole lemon zest, 18G corn starch, 25G powdered sugar, 2 egg yolks and stir well.
(2) Add vanilla pods to 220G milk, heat to slightly bubbling, about 40 degrees, while stirring, add the stirred egg yolk paste, the speed should be fast, do not become egg flowers.
(3) Stir the vanilla lemon custard paste into a non-stick pan and heat it, stir continuously over low heat until it becomes thick, lemongrass custard is ready, put it into an oil-free and water-free basin and let it cool.
(4) 90G light cream to beat and set aside.
(5) 50G room temperature softened butter add 25G powdered sugar to beat until whitish swell.
(6) Add a spoonful of lemongrass custard to the beaten butter, beat well with an electric whisk, and then add it 3 times to thoroughly whip evenly.
(7) After the lemongrass custard and butter are well mixed, pour into the whipped cream and stir well with a spatula. Lemongrass Custard milk sauce is ready.
assemble
(1) The bottom and surrounding of the mold are covered with oil paper, and the crust with almonds is placed at the bottom first. Squeeze in lemongrass custard custard, shake off the bubbles, and finally cover with a layer of crust. Refrigerate for about 2 hours.
