Grilled tofu is a traditional dish of Gaoping with a long history, dating back more than 2,000 years.

There is a story about the origin of roasted tofu: during the Warring States period, Qin Zhao launched a great war at Changping (present-day Gaoping City), and the two sides were evenly matched and fell into a protracted war. The State of Qin used a counter-plot, and the State of Zhao was deceived, and replaced Lian Po with a frontal battle, and made Zhao Kuo a marshal. As a result, the Qin general Bai Qi defeated the Zhao army and killed all the more than 400,000 Zhao troops who surrendered.
Bai Qi's brutality aroused strong dissatisfaction among the people of Gaoping, who used to eat roasted tofu to express their hatred for Bai Qi.
To make roasted tofu, first cut the tofu into 5 cm square and 2 cm thick cubes, which means that the white is cut with a thousand knives; secondly, the tofu is roasted on a high fire, roasted until both sides are golden brown, indicating that the fire is white; the roasted tofu is boiled again in boiling water, indicating that the boiling water is boiled white; finally, the cooked roasted tofu is accompanied by a dip made of soybean residue, fresh ginger and garlic paste.
