However, it is a famous specialty snack in Xianyang, and the local saying is once "soup delicious and delicious wontons". In November 2006, Zhang Ji Catering Co., Ltd. was announced by the Ministry of Commerce as the first batch of Chinese time-honored brands; in June 2008, Zhang Ji Wonton Making Technique was announced by the Shaanxi Provincial Department of Culture as the first batch of Shaanxi Provincial Intangible Cultural Heritage——

More than twenty years ago, when I was young, I often went with my family to eat Zhang Ji wontons. At that time, their shop was still on Xianyang North Street, although the environment was simple, but the business was very good. In addition to the ravioli, their buns and steamed dumplings are also very delicious! Later, North Avenue was renovated, the old houses were demolished, and the Zhang Ji Wonton Hall was relocated to Xinxing South Road, not far to the north.

As I grew older and my tastes continued to change, I rarely went to Zhang Ji Wonton Restaurant again, and hot pot, grilled meat, stir-fried vegetables, Western food, buffet food, etc. became my first choice for eating out. Not long ago, my family and I passed by Xinxing Road and happened to see Zhang Ji Wonton Museum, which instantly evoked memories of the past. Although I had already eaten, I decided to go inside and eat a bowl of ravioli and feel the taste of my childhood.

Walking into the Zhang Ji Wonton Museum, it is like coming to a museum, with various exhibition boards hanging on the walls, introducing the long history, production process and old photos of Zhang Ji Wonton, telling the ups and downs of the Zhang Ji Wonton Museum from 1918 to the present.

In 1918, Zhang Guangci from Tengzhou, Shandong Province, began to open a shop in Jinan to sell wontons. In 1937, with the outbreak of the "July 7 Incident", Shandong was involved in war, and Zhang Guangci closed the shop and left. Later, his son Zhang Liansheng came to Xianyang and began to sell wontons on Dongming Street, first setting up stalls and then opening shops. Since then, after years of operation, Zhang Ji wontons have been loved by the people of Xianyang with their thin skin, fragrant soup and fresh filling.

In 1956, the public-private partnership, Zhang Liansheng became the director, and the sign of Zhang Ji Wonton Hall was replaced by "North Avenue Third Cooperative Canteen". Soon, he played the "Zhang Ji Wonton" brand, and even caused himself to kill himself. At the beginning of the Cultural Revolution, Zhang Liansheng was convicted of "restoration", hanging up a sign, standing on a bench, and writing inspections. Later, he fell and died.

After the reform and opening up, Zhang Liansheng's wife Yan Qingzhi once again supported the façade of "Zhang Ji Wonton" and continued to operate in the old place. Unexpectedly, one day, the gangsters entered the house, and Old Lady Yan died at home. His eldest son, Zhang Zhaoxin, took over the wonton house, became the third generation of operators, and broke through the world.

The skin of Zhang Ji wontons is made by hand rolling, the skin is thin and translucent, the tendon bucket is resistant to cooking; the meat filling is beaten with a knife and stick, delicate and sticky, very delicious; the chicken bone soup is boiled over high heat and simmered over low heat, which is delicious and oily but not greasy. Put the wontons in a bowl, pour delicious chicken soup, and add more than ten kinds of condiments such as shrimp skin, seaweed, winter vegetables, coriander, leeks, garlic seedlings, etc. Finally, place a few shredded chickens and a bowl of authentic "Zhang Ji Wontons" is complete!

Seeing the wontons served by the waiter, it is like a goldfish playing in the water, but also like a butterfly flying, steaming, delicious and nutritious. Unfortunately, today's young people no longer like this elegant taste, and the elderly have become the main customers here...
