Bitter melon, a genus of plants in the family Cucurbitaceae, is an annual climbing,weak herb with many branches; the stems and branches are covered with soft hairs. Hermaphroditic, the male flower peduncle is slender and slightly hairy; the bracts are green with slight marginal hairs; the calyx lobes are ovate lanceolate and covered with white soft hairs; the corolla is yellow, the lobes are soft hairs; and the stamens are detached. The female flowers are solitary, the peduncle is slightly hairy, the ovary is spindle-shaped, and the stigma is expanded. The fruit is spindle-shaped or cylindrical, multi-nodular, orange-yellow when ripe. The seeds are oblong and marked on both sides. Bitter melon is native to India and is widely cultivated in tropical to temperate regions of the world. It is widely cultivated in both north and south of China. The production process and key points of cold bitter melon are as follows:
Ingredients: 600 g of fresh and tender bitter melon.

Excipients: peanut oil 50 g, garlic 1 head.
Seasoning: fine salt, sugar, monosodium glutamate, sesame oil, green onion oil, sesame oil, balsamic vinegar a little.
1: Wash the bitter melon with clean water, break it open and cut into 5mm thick slices.
2: Peel the garlic and cut into minced garlic.
3: Add water, 10g salt, 20g salad oil to a boil in a pot, add bitter melon slices and bring to a boil for 5 to 8 minutes.
4: Drain the bitter melon and put it in cold boiling water for 5 minutes, then drain the water and plate it.
5: Mix salt, sugar, monosodium glutamate, sesame oil, shallot oil, sesame oil and balsamic vinegar in a bowl.
6: Pour the juice on the bitter melon on the plate and mix well.
7: Sprinkle the minced garlic evenly over the bitter melon.
8: Heat peanut oil in a wok until 80% hot, pour the bitter melon on the plate and serve.
