The term "goodness" comes from the first part of Mencius's Dedication: "The poor are good at their own, and the poor are good at the world." The meaning is that when you are poor, you will seek your own goodness, and when you are proud, you will achieve the goodness of the world.
In 1938, in order to serve the society and facilitate the crowd, Mr. Lu Zuofu, a patriotic industrialist, founded the Jianshan Restaurant on the right side of Beibei Park with the brand name of "Kanshan", which mainly operates Sichuan cuisine banquets and concurrently sells snacks. In order to attract customers, a celebrity chef is hired to run the restaurant. Chefs Wang Rongxuan, He Fachu, Liu Shaohua and others have carefully created a unique "C&Shan San" flavor snack such as Jian Shan Tang, C&Shan Bun and C&Shan Noodles, which have been well received by celebrities and foodies from all walks of life.

Since then, Kanshan snacks have become famous, the restaurant has set snacks with large dishes, snacks to drive meals, and the business is very prosperous.
The ingredients used in Kanzen Soup are about 10 kinds of chicken, ham, pork trotter tendon, egg skin, magnolia slices, yellow flowers, fungus, shiitake mushrooms, and water-haired squid, and then accompanied by pepper, Sichuan salt, bran vinegar, shallots, monosodium glutamate and other spices. Thick and rich, delicious, nutritious and popular. After 1949, The Restaurant was changed to a state-run restaurant, and Kanzen Soup continued to be operated by Izumi Wailou, inheriting the original flavor characteristics, inexpensive and high-quality, facing the people, and becoming a popular food.
Kanzen buns not only have unique ingredients and exquisite skills, but also serve a plate of red oil chili peppers and a bowl of green onion soup to customers who come to the restaurant. In 1984, it was rated as "Famous Snack" by Chongqing Municipality.
Chongqing people are good at making buns, in addition to the buns, the most famous is the Nine Gardens Buns.
Jiuyuan Bun was created in the 1930s by Shu Zejiu of Pude Restaurant on West 3rd Street in Chongqing. He started a new venture on Fish Market Street, avoiding big restaurants and specializing in snacks. After finding the storefront, he asked mr. Gongsun, a fellow villager, to name the small shop, and Mr. Gongsun wrote the word "Jiuyuan" as the name of the store in the name of the nine characters of Shu Zejiu, taking the meaning of "long". The word "Nine Gardens" was written by Mr. Gongsun in the child's body and is still in use today.
Shu Zejiu is based on his own specialty of white buns, accompanied by the same characteristic duck ginseng porridge and egg handmade noodles. Due to the fine workmanship, exquisite selection of materials and delicious taste of the buns in Jiuyuan, it is mixed with nutritious duck ginseng porridge to eat a meal, which is cheap and good, making people all over the body, and soon became famous.
As the business of Jiuyuan is getting more and more prosperous, the guys in the store are also playing their own small calculations: the cost of the bun shop is low, the threshold is low, it does not cost much to open a shop, plus it has been working in the store for so long, and the craftsmanship does not exceed the boss, but also counts as eight or nine. So they opened a bun shop on a separate portal, selling snacks similar to Jiuyuan. In order to indicate that it has a considerable relationship with the Nine Gardens, the names are also similar to the Nine Gardens, such as "Eight Gardens" and "Ten Gardens". For a time, it was passed down as a joke and left an interesting story for the history of Chongqing catering.
Jiuyuan Bun Shop follows the traditional process of making a salty filling with pork belly, winter shoots, dried scallops, golden hooks, ham and other spices, or sweet fillings with walnut kernels, dates, melon strips, orange cakes, rose candy, pork plate oil, etc. The characteristics of Jiuyuan buns are that the skin is thin and filling, the pine bubbles are refreshing, and the taste is delicious and sweet.
The multi-flavored buns of the Yishi Restaurant are also very distinctive: they were created in 1980 by Zhou Xinnian, a special first-class white case master. Multi-flavored buns are a small bag of small packets combined with various flavor types and shapes. There are four salty and two sweet in one cage, the salty ones are Yiyang Bao, three ding bao, sauce meat buns, fresh meat buns, and sweet bean paste buns and Ma Rong buns. The product originated from the Yangzhou Three Ding Bao, which was improved to become the style and shape of the Sichuan trumpet. Sold in a cage at a store, customers can taste 6 different flavor types at a time, which is very popular. In 1991, the multi-flavored bun was awarded the title of "Famous Snack".
Chongqing beef charred bun, also one of the traditional Sichuan points, is named because the dough is charred and crispy, and the beef is made of heart. The product used to be supplied mostly for stalls, but is now fried and sold, and the aroma is overflowing. Later, he entered the large restaurant and offered a feast as a delicacy. It is now made by Tian Yiren, a special first-class chef of Yunlongyuan Bai Case.
