Sour and spicy shredded squid

Gourmet Ingredients:

  1 squid, 200 grams of bamboo shoots, 50 grams of shiitake mushrooms, 1 green onion, 3 slices of ginger, 1 red pepper;

  Ingredient A: 2 tbsp soy sauce, 1 cup broth, 1 tsp vinegar and 1 tsp salt;

  Ingredient B: 2 tbsp starch water;

  Ingredient C: 1/4 tsp pepper.

Gastronomic Preparation:

  Wash the water squid and cut into strips. Peel the bamboo shoots, wash the shallots and ginger, and soak the mushrooms softly and remove the stems, all cut into fine strips.

  Bring half a pot of water to a boil, add the squid and bamboo shoots and blanch them, and remove them.

  Heat 2 tbsp oil over medium heat and sauté chives, ginger and red pepper.

  Add shredded squid, bamboo shoots and shiitake mushrooms and sauté until fragrant, add Ingredient A.

  When the soup is boiling, add Ingredient B to mix well, put it out, and sprinkle with Ingredient C.
