1. Crush 100 g of cookies into small pieces, add 30 g of melted butter and mix. Sprinkle the cookies in a 15 cm diameter mold and then cool them in the refrigerator.
2. Soak 5 g gelatin in ice water.
3. Mix 200 g of cream cheese and 40 g of unsweetened yogurt, add 30 g of sugar and 80 g of mango puree in turn, then mix further.
4. Squeeze the gelatin soaked in (2) dry and add 20 g of hot water to the bowl and dissolve. Add to (3) and mix.
5. Gently stir 200 ml of fresh cream and 10 g of sugar, add (4) and mix. Finally, add 1 teaspoon of lemon juice and mix.
6. Pour the mixed cheesecake mixture into the mold and flatten its surface. Cool in the refrigerator for 2 hours.
7. Make mango jelly. Soak 2 g gelatin in ice water for soaking.
8. Squeeze the gelatin soaked in (7) dry and add 20 g of hot water to the bowl and dissolve. Mix with 50 g mango pulp and 1 teaspoon lemon juice.
9. Pour the mango jelly mixture over the cheesecake that has been frozen and hardened and let cool in the refrigerator for 4 hours.
10. Decorate with mango or other fruits if you wish. If you are making it personally, you can use a hot knife to cut the incision clean, if you are a commercial producer I recommend you to use an ultrasonic cake cutter, the cutting surface is clean and beautiful.
