Take a small basin, beat in an egg, whisk well with chopsticks and set aside.
4. Cut the green onion half a root from the middle, remove the hard core, cut into shredded shallots, cut into ginger pieces, and put them into a basin.
5. A piece of lean pork is first cut into thin slices, then cut into thin wires, cut well, put into a water basin to wash it, and then pour into a colander to control the moisture.
6. Simply marinate the shredded meat below, add a little salt, a little pepper, a few drops of cooking wine, add a spoonful of corn starch, mix well with chopsticks, marinate for 5 minutes to make the shredded meat slowly taste.

13. Stir and bring to a boil, add the side dish, then pour in the tofu and bring to a boil over high heat. After bringing to a boil, change to medium heat and cook for 2 minutes.
14. After two minutes, lift the lid and add the appropriate amount of water starch.
15. After hooking the mustard, pour a little egg liquid, wait for the egg to solidify, then add a spoonful of pepper, add half a spoonful of aged vinegar, so as to ensure that the sour and spicy taste of pepper and vinegar is not easy to volatilize.
16. Then turn off the heat and pour into the soup bowl, sprinkle with coriander and the green onions are ready to eat.
