【Raw Materials】
Ingredients: 300 g tofu.
Ingredients: Pork (fat 3 lean 7) 100 g, water hair golden hook 15 g, water hair dried scallops 15 g, cooked lean ham 15 g, green beans 10 grains, 1 tomato, 20 g coriander.
Seasoning: 50 g of cooked lard, 10 g of cooking wine, 5 g of refined salt, 1 g of monosodium glutamate, 1 g of pepper, 10 g of green onion, 20 g of wet starch, 500 g of chicken broth, 10 g of chanterelle.
【Method】
1. Chop the pork into fine mushrooms, wash and cut the golden hook and dried scallops into untouched, add salt, monosodium glutamate and pepper and stir well to make meat filling. Cut the ham into diamond-shaped thin slices. Parsley is picked and washed. Cut the green onion into flowers. The tomatoes are cut into lotus petals. Wash the green beans with water.
2. Remove the coarse skin off the surface of the tofu, mash it and filter it into a fine puree with a fine sieve, add egg white, fine salt and monosodium glutamate, stir well and set aside.
3. Prepare 20 slices of small spice spoon, grease it, scoop half of the tofu puree, put the meat filling on the tofu puree, cover it with a layer of tofu puree, and finally paste the ham slices and coriander leaves on the surface of the tofu puree to form an orchid grass shape. Take a small dish and grease it, scoop the remaining tofu puree into the dish and smooth it out, and insert a few green beans in the middle to make a lotus.
4. When eating, steam the poached tofu and lotus puff for 5 minutes, put the poached tofu into the surrounding area of the plate, and place the lotus puff into the lotus petals carved from tomatoes and place them in the middle of the plate. Heat the oil in the pot, add chicken broth, salt, monosodium glutamate, dilute the mustard with wet starch, drizzle with chicken fat, remove the green onion, and pour it on the poached tofu.
