◌ Ingredients: 230g beef, pickled red pepper, wild mountain pepper, shredded sauerkraut, rice noodles
◌ Seasoning: shallots, ginger, garlic, coriander, sugar, salt, chicken essence, soy sauce, dark soy sauce, oyster sauce, sesame oil, starch
◌ Directions:
(1) Marinated beef: 1 spoon of light soy sauce, 1/2 spoon of dark soy sauce, a little sugar, 1 spoonful of starch, 3 spoons of water to mix and stick, then add 1/2 spoon of sesame oil to grasp and marinate for 20 minutes
(2) Relax the oil in the pan, add the beef and fry until it changes color, then quickly stir-fry for about 30 seconds
(3) Stir-fry chives, ginger and garlic in an appropriate amount of oil, add pickled red pepper, wild mountain pepper, and sauerkraut shreds and stir-fry until fragrant
(4) Add 1 tbsp oyster sauce, a pinch of salt and chicken essence, add beef and stir-fry for 1 minute
(5) Soak the rice noodles in warm water for 1 hour, then cook until they are soft and hard to your liking, put them in a bowl, and bring them over cold
(6) Put coriander, green onion, a little chicken essence, 1 spoonful of soy sauce, 1 spoonful of oyster sauce at the bottom of the bowl, add rice noodle soup, yard the sautéed sauerkraut beef, and finally decorate with coriander
