After the lamb is bought, the lamb bones are put into a large basin. Then pour cold water into the basin and soak the lamb for 2 hours. 2: After soaking the lamb for 2 hours, pour out the blood and water soaked in the basin and wash it twice more. Wash it before preparing the boiled lamb soup.
Put all the washed lamb bones and lamb into a large pot, and then pour enough cold water into the pot at once. It is best to add enough water at one time, and water should not be added in the middle. Here there is no need to cover the pot lid, first turn on the high heat to boil, and force out the remaining blood in the lamb.
Go down and prepare a small piece of ginger, cut the ginger in half and crush it with a knife; prepare a small piece of onion, cut the onion into small pieces; cut some shallots into small pieces and set aside.
After the pot is boiled over high heat, then fish out all the blood foam in the pot. This blood foam smell is relatively large, must be fished out, otherwise it will affect the taste of the soup.
Then add the shallots, sliced onions and sliced ginger to the pot, and add a dozen peppercorns to stir. Cover the pot and turn to medium heat and simmer for 1.5 hours.
3: After simmering for 1 and a half hours, the lamb in the pot has been stewed very soft and rotten. At this time, do not add salt to the pot, and then add salt when you finally eat. First, fish out the lamb in the pot and let it cool. There are still a lot of bones in the pot, and continue to simmer for half an hour.
After the lamb is slightly cooled, cut the lamb into small pieces or small slices.
