Qishan is the sacred place of the Zhou people Zhaoji, and throughout the ages, Qishan famous food is popular for its antique flavor and exquisite and unique cooking techniques. Qishan was rich in wheat and of excellent quality, and had been feasted on by King Wen of Zhou, and had treated the Zhuge Shu and Sima Wei armies that had confronted each other on the banks of the Wei River in Wuzhangyuan and Wei River. Most of the people are mainly pasta, everyone is bright-voiced, sexually stubborn, and uses a lot of sounds to speak, such as turtles biting iron shovels. Gokyo powder is Chiyama dough skin. What is "Gokyo powder", there is a county record as evidence: during the Kangxi Dynasty, the imperial chef Wang Tongren made "dough skin" full-time in the imperial dining room of the Kyoto Imperial Palace, so it was called "Gokyo powder". Wang Returned to his hometown in Qishan and received apprenticeship at Bamugou (also known as Bamugou (also known as Bamugou, where Eight Scholars, including Boda were buried during the reign of King Wen of Western Zhou). After Wang's death, this technique was monopolized by the people of Bamugou Village, and it was not taught to those who were not in the village for nearly a hundred years. Later, during the "Tongzhi" and "Guangxu" years, due to the marriage of children and other reasons, the techniques flowed in all directions. In recent years, there have been innovations in the art of making, in addition to the traditional steaming skin, there are still varieties of rolling steaming, steaming and other varieties.

Originally a summer and autumn food, Gokyo powder is now sold throughout the year. In the land of Fengming, men are not divided into strong and strong, and women are not divided into concubines and daughters-in-law, all of them have a taste of food and are happy to be tireless. Yujing powder is ground into powder with high-quality winter wheat essence, and the production process is rigorous from twelve courses, namely: kneading, washing, passing, dian, clearing, hair, mixing, rolling, wiping, steaming, cooling, and stacking. Its characteristics: white, thin, light, soft, tendon, fragrant. In recent years, villagers from all counties in Xifu have gone to Qishan to learn art, broadcast the three Qins, and walked through the prefectures and counties, showing the shape of a spark, radiating and spreading to the surrounding provinces and cities, with a great potential to rush out of the northwest and go to the whole country.

Most of the practitioners of this art are advertised as "Shaanxi noodle skin".

Since the Tang and Song dynasties, Qiyi has been the place where Xida Lintao must pass through, and the north must pass through Qianlong. Qian'er pot helmet is also called Wenwang pot helmet. A pot helmet is a kind of cake made from wheat noodles and baked on an iron pot. It is named because it resembles the bottom of a pot and is as large as a pot lid. It is not only the staple food of Shaanxi people, but also the dry food that they carry with them when they go out. Speaking of the origin of the Qishan pot helmet, it also dates back to the era of King Wen of Zhou in the era of three thousand years ago, when it is said that King Wen sent troops from Qishan Zhouyuan to cut down the sword, and the pot helmet was the soldier's military food. Therefore, the Qishan pot helmet is also known as the "Wenwang pot helmet".

Qishan pot helmet, known as "dry, crisp, white, fragrant" famous in the West Province. Its production process is: take nine pounds of refined flour and a pound of yeast head mixed well, and then half a pound of cooked lard with two pounds of warm water to open the sprinkling noodles, mix into flour, put on the board, people ride on the top of the wooden bar, do up and down jumps, more often sweat, while pressing the side sprinkled dry flour, into a hard ball, and then sprinkled salt and five-spice powder, so repeatedly pressed, the dough is bright and moist, round cake embryo-like, take the damp cloth cover strict plate, wait for sex, and then roll, sprinkle sesame seeds on the front of the pot. In the 1970s, there was an old man in Yangliu Village in Qishan Who had his eightieth birthday, and he specially instructed his children and grandchildren to eat Bizuzi noodles, gokei powder and pot helmets. On this day, the theater box is broadcasting Zhou Enlai's National Day reception in the Great Hall of the People in Beijing. The old man rubbed the red spicy oil on his mouth with his cuff and said, "Chairman Mao Zhou, the premier of the zhou dynasty, must be a pot helmet." ”

Li Xiqi is a native of Yongchuan Town, Qishan County.
