The sampling information of this notice involves aquatic products, bee products and edible agricultural products in three categories, with a total of 91 batches, of which 1 batch of unqualified food, with a pass rate of 98.90%.

For the unqualified food in this notice, the Dalian Municipal Market Supervision and Administration Bureau has organized the market supervision departments at the municipal and county levels to initiate verification and disposal of production and business units in accordance with the Food Safety Law, the Measures for the Administration of Food Safety Sampling Inspection and other laws and regulations.

Hazards of dimethylnitrosamines

Dimethylnitrosamine (ndma) is one of the most toxic chemicals in n-nitrosamine compounds and is one of the four major food contaminants. N-Dimethylnitrosamine has a stimulating effect on the eyes and skin, even in small doses, as long as long-term exposure can increase the risk of cancer in the human body. Eating foods containing n-dimethylnitrosamines exceeding the standard has the risk of inducing cancer and bringing harm to human health.

Fresh aquatic products generally do not contain volatile n-dimethylnitrosamines, but are occasionally detected in aquatic products. Mainly because aquatic products are not completely fresh when pickled and processed, their rich protein decomposition produces amines. In addition, the crude salts used in the salting process of aquatic products usually contain nitrates, nitrites, and certain microorganisms can reduce nitrates to nitrites, thereby accumulating nitrites. Under suitable conditions, nitrosylation of nitrite and amines occurs to form n-dimethylnitrosamines.
