1. Prepare the ingredients first

2. After all the ingredients are ready, start making chili red oil
Burn the oil in the pot, when the oil temperature is 50% hot, pour the dried chili peppers and other spices into the pot, keep the low heat and fry for about 1 minute, after the peppers are fried and stir-fried, pour out the controlled oil, and pour the spices that have controlled the oil into the juicer and beat them into a powder for later.
3. Burn the oil in the pot again, after the oil is heated, pour in the ginger and garlic minced and stir until fragrant, pour in the freshly beaten paprika and stir evenly, add 2 grams of thirteen spices, turn on the low heat and stir non-stop for about 2 minutes, boil out the flavor of the ingredients.
Then pour the boiled chili red oil into the basin, add two spoonfuls of white sesame seeds, 2 grams of salt, 1 gram of monosodium glutamate, a little sugar to freshen, 10 grams of light soy sauce, 5 grams of aged vinegar, stir well and set aside.
4. Start cooking the noodles
Add some vegetable oil to the pot to prevent the noodles from sticking, but also to avoid overflowing the pot, after the water boils, put the noodles into the pot with chopsticks and gently stir, cook until the noodles are all floating, pour a little water from the side of the pot, the water in the pot boils again and then turns off the heat.
Put the noodles in a bowl, add a spoonful of noodle soup at this time it is best to add stock, then pour the prepared chili red oil, stir well, add peanuts, squeezed vegetables, and sprinkle with green onions and coriander!
