The first step; and noodles, using medium gluten flour, add a little salt with warm water and noodles, soft smooth dough, wrapped in plastic wrap to wake up the noodles for 30 minutes. The third step: choose side dishes, each place braised noodles in the side dishes are different, but there are roughly sweet potato noodles, tofu shreds, kelp shreds, quail eggs, seasonal vegetables, etc., according to their own preferences.

The fourth step; if you have time, you must use lamb bone to boil bone broth, and the taste of the braised noodles is more authentic, and if you don't have time, you can directly add boiling water.

Step 5: Put the oil onion, ginger and garlic on a hot pot, then put the marinated lamb on high heat and stir-fry, add the broth or boiling water, and then add the side dishes, after the water boils, remove the dough into strips and put it into the pot.
