Stuffed tofu is to hollow out the tofu blocks, fill them with meat filling, and fry them until the skin is golden and crispy.

Stuffed tofu, which has a tender texture, is a common dish in the recipes of southern restaurants. This dish, the soup is mellow, tender and smooth, the taste is delicious, sucking enough tofu in the soup, a bite down is simply the feeling of bursting juice... Delicious to be amazed.
Ingredients: 500 grams of brine tofu, 100 grams of minced pork, 15 grams of minced green onion, salt, 10 grams of ginger, oyster sauce, 2 mushrooms, soy sauce, a little pepper, a little corn starch, 1 teaspoon cooking wine,
method:
1. First chop the lean meat into puree, cut the ginger and chives into minced pieces, and cut the shiitake mushrooms into fine cubes. Add diced shiitake mushrooms, minced green onion and half of the ginger foam to the minced meat, add cooking wine, white pepper, water starch, and salt to make the meat filling and marinate for five minutes.
2. Cut the tofu into thick pieces, use a small spoon to dig a hole in the surface (if you like meat, you can dig deeper, but don't break the bottom), and then fill the marinated meat filling in the tofu hole.
3. Put a little oil in the pan, heat the oil and fry the side with the meat filling until it is slightly yellow, then turn it over and fry the other side, fry it well and then fish it out.
4. Leave the bottom oil in the pot (if not enough can be added), the remaining ginger and minced green onion stir-fry fragrantly, add fresh soup in the pot (can be replaced by water), add soy sauce, oyster sauce and salt to stir evenly,
5. Place the fried tofu with the meat filling side facing down, place it neatly in the pan, simmer over medium heat until the juice is about to be harvested (turned over halfway), turn off the heat, and serve.
The fireworks in the kitchen are actually another form of warm love. Making a dish is like finishing a great piece of work, or even a beautiful work of art. I personally think that ordinary happiness is to watch the family eat the dishes, especially satisfied, and have a special sense of accomplishment.
