1. Prepare 400 grams of fresh pork liver, first remove the white fascia on the top to avoid affecting the taste, then cut it from the middle, then change the knife to cut into thin slices and put it into the basin.

2. Add water to the basin, rinse twice, wash the blood inside, avoid the pig liver from getting fishy, put it into a colander after controlling the water, squeeze the water again, and put it into the basin.
3. Next, marinate the pork liver, add 5 grams of cooking wine to the basin to remove fishiness, 3 grams of dark soy sauce to tone the base color, add 5 grams of spicy fresh sauce, and mix evenly by hand to absorb the pork liver into the seasoning.
4. Add a little corn starch, grasp well with your hands, add starch to lock the water inside the pork liver, so that the pork liver remains tender.
5. Finally, add a little vegetable oil to prevent the pork liver from sticking.
6. Prepare a small piece of ginger to pat flat, chop into ginger, garlic a few flattened, chop into minced garlic, and put together with ginger, millet pickled pepper two chopped, millet spicy two cut into fine rings, put together in the basin.

13. After sautéing the aroma, pour in the pork liver, stir-fry a few times quickly, and start seasoning.
14. Add 2 grams of chicken essence, 1 gram of monosodium glutamate, 2 grams of sugar to taste fresh, cook in 5 grams of soy sauce to taste fresh.
15. Stir-fry twice on high heat, sauté the pork liver into the flavor, add the cut garlic seedlings, continue to stir-fry for 15 seconds, and fry the garlic seedlings until they are broken.
16. Drizzle a little oil before cooking, stir-fry a few times again, then turn off the heat and start the pan.
17. Well, this spicy and tender stir-fried pork liver is ready.
