Marinate the yellow fish with shallots and ginger, cooking wine, and soy sauce for 30 minutes, then fry the yellow fish mackerel skin downwards to set the shape.

Dark soy sauce/light soy sauce/shallots
The fins of the yellow carp are cut off, the large spines are removed, the head and body are separated, and the fish meat is cut into small pieces of one centimeter square.
Put the oil in the non-stick pan and add the fish pieces and sauté until fragrant. The proportion of rice and water is good according to the previous method, and the fish belly and fish head are placed on top of the rice and drizzled into the old soy sauce. Cover the lid on low heat for eight minutes after bringing to a boil on high heat and simmer for twenty minutes. Sprinkle with shallots.
Yellow croaker/plum blossom meat
Rock sugar /garlic / dried chili / rice wine
Cut the yellow fish into pieces and the plum blossom meat into thick slices. Heat the oil and stir-fry the plum blossom meat until browned.
Sauté sugar in rock sugar, stir-fry garlic and chili peppers until fragrant. Stir-fry the yellow fish in the oil, so that the fish becomes slightly soft, and the sugar color is burnt yellow.
Step 03
Add 30ml of rice wine to choke the aroma, stir-fry evenly and slightly into the taste. Add the right amount of "hot boiling water" without the ingredients. Bring to a boil over high heat. Continue to dry the broth on high heat.
