Ingredients required:
2 chicken thighs, ginger, green onion, salt, cooking wine, sugar, pepper, chicken powder, eggs, corn starch, potato starch, green red pepper, green peppercorn, cooking oil, flower carving wine, spicy fresh sauce, spicy red oil, pepper oil
Preparation steps:
Step 1: Cut the chicken thigh into small pieces, you can cut it slightly smaller, then put the cut chicken into the water, wash it several times, wash it thoroughly, and squeeze out the water for later.

Step 2: Add a little ginger slices and green onion to the chicken nuggets, and then add a little salt to the bottom flavor; then pour in the appropriate amount of cooking wine, and grab out the juice inside the onion and ginger; then add a little sugar, pepper, chicken powder to taste, grab and mix well, then marinate for 15 minutes, let the chicken nuggets fully flavor; finally pick out the onions and ginger inside.
Step 3: Beat an egg into a chicken nugget bowl, grab and mix well, let each chicken nugget be coated with egg liquid; then add a little corn starch and stir well; then add a little potato starch, continue to grasp and mix well and let stand for 30 minutes.
Step 4: Cut the green red pepper into small rings, cut the ginger and garlic into small particles, add a little green peppercorns and put them on a plate for later.
Step 5: Heat the pot sufficiently, add enough cooking oil, the oil temperature is 60% hot, the chicken is sequentially and dispersed into the pot, do not stir first, wait for the chicken nuggets to be fried until they are set (about 30 seconds), stir slightly with the spatula, and separate the chicken nuggets that are glued together. The whole process is slow fried over medium heat, about 6 minutes, and the chicken nuggets are almost cooked before the chicken can be fished out with a colander.
Step 6: Continue to heat the oil in the pan until it is 70% hot, add the fried chicken nuggets and fry them for about 40 seconds; after frying, fish them out to fully control the dry oil and set aside.
Step 7: Heat the pot with a little oil, sauté the ginger and garlic to fry the aroma, then put the green pepper into the pot, fry the hemp flavor of the green peppercorns and then add the green pepper rings and fry again; then put the fried chicken nuggets into the pot and stir-fry evenly, then season a little salt, sugar, chicken powder, flower carving wine, spicy fresh dew, turn on the high heat and stir-fry evenly, then pour in a little homemade spicy red oil and pepper oil; stir-fry again to get out of the pot and plate.
