Eating pulp water can keep the intestinal flora balanced

The results, entitled "Lactobacillus JL-3 isolated from slurry water can alleviate hyperuricemia by degrading uric acid," were published on March 25 in gut microbiology, a well-known journal in the field of microbiology. One of the first authors is Wu Ying, a doctoral student majoring in microbiology at the School of Life Sciences of Lanzhou University, and one of the corresponding authors is Li Xiangkai, a professor at the School of Life Sciences of Lanzhou University.

"Eating pulp water is not only good for alleviating the symptoms of gout, but the probiotics it produces can also keep the intestinal flora balanced, and if the balance of the microbiota is broken, it will cause sub-health of the human body." In an interview with reporters on March 31, Li Xiangkai said so.

The study isolated fermented lactobacillus JL-3 in traditional fermented food slurry water, found that it can control the accumulation of uric acid in tissues by degrading uric acid in animals, and revealed the mechanism of specific action.

"About four or five years ago, when a few of our friends were having dinner together, one of them said that he couldn't drink anymore because of gout; another friend said that when he was in Xinjiang, gout was very serious, and it was much better after he returned to Lanzhou, because he especially liked to eat Lanzhou's pulp water surface. I thought this was very interesting, so I asked my students to check the information first. Li Xiangkai explained the original cause of the study.

The proportion of people suffering from gout in Gansu is much lower than the national average

After receiving the task assigned by Teacher Li, the environmental microbiology research group, including Wu Ying, consulted a large number of materials and learned that the proportion of people suffering from gout in Gansu is much lower than the national average, but this alone is not enough!

So in June 2018, the members of the research group walked into some hospitals in Lanzhou, walked to the streets and alleys of Lanzhou, and found through a large number of on-site questionnaires and online questionnaires that in Lanzhou, the probability of gout in people who often eat pulp water surface is relatively low, and the probability of gout is relatively high for people who do not eat pulp water surface.

"Through data review and questionnaire surveys, we speculate that probiotics in fermented slurry water have a positive effect on gout; while probiotics decompose and adsorb harmful substances in the intestine to reduce the body's absorption of harmful substances, which is called 'intestinal repair'," Li Xiangkai said.

With these preliminary "mapping" work, the members of the research group purchased more than 10 copies of slurry from different manufacturers (produced in Gansu Province) in many supermarkets and street stores in Lanzhou, and then found through laboratory testing that all samples had probiotics that could degrade uric acid.

"After eating slurry water for more than 20 years, I didn't expect so many benefits!" Even Wu Ying thought it was amazing.

Wu Ying is a native of Lanzhou, and in her impression, her family eats pulp water all year round, ice pulp water in the heat of summer, and hot pulp water when the weather turns cold. Whether it is when the appetite is poor, or when the indigestion is bad, drinking a bowl of sour and refreshing syrup, people immediately feel much more comfortable, which is actually the role of microorganisms.

Slurry water has a higher cholesterol degradation capacity

Syrup is a traditional fermented food made from vegetables such as celery and cabbage and is part of the daily diet of people in the Northwest Territories. It has been reported to be rich in lactic acid bacteria, acetate bacteria and yeasts, and has a high cholesterol degradation capacity (75%). According to the 2017 survey report, the number of patients with hyperuricemia in China has reached 170 million, with an annual growth rate of 9.7%, which is mainly caused by the incomplete degradation of purine-rich foods into uric acid in the human body and the accumulation of uric acid in tissues. However, traditional treatments cannot reduce the accumulation of uric acid in the body in a short period of time without side effects.

After long-term research, the research group screened a new strain with uric acid degradation ability from the fermentation slurry water fermented Lactobacillus fermented Lactobacillus JL-3. Through mouse experiments, it was found that the serum uric acid of the mice with gastric JL-3 was reduced by 31.3%, the fecal uric acid was basically the same as that of the control group mice, and the content of some inflammatory markers and oxidative stress indicators associated with hyperuricemia was significantly reduced in mice, and the intestinal microbial disorder caused by hyperuricemia was alleviated.

Based on these experimental results, the team speculated that JL-3 may play its role in a variety of ways. First, JL-3 can degrade uric acid in the intestine, thereby reducing the accumulation of uric acid in the intestine; second, JL-3 can improve defecation activity, thereby reducing the excretion of uric acid. Third, JL-3 regulates the structure and function of the gut microbiota.

"The study uses fermented food slurry water to degrade uric acid to alleviate hyperuricemia in this field has timeliness and value, and provides a promising strategy in the treatment of human hyperuricemia." Li Xiangkai said.
