
Mesh oil roll
Net oil roll is a famous dish in Changzhou. It is made by wrapping the date paste in lard oil and frying it. The vegetables are full and round, soft and sweet, and golden in color.
【Raw Materials】
Date paste 300-400 g, lard 1 large sheet, 5 egg whites, 25 g dry starch, 80 g cotton sugar, 1500 g cooked lard (about 100 g).
【Method】
1. Rinse the lard in warm water and let it dry. Change the knife to 2 rectangles about 30 cm long and 12 cm wide. Then divide the date paste into two equal parts, roll into long strips, place them on the side of the net oil, roll them into long round strips, and cut into 3 cm rolls. Then whip the egg whites into a lather, add dry starch and stir to form an egg whiplash paste.
2. Heat the wok on high heat, add cooked lard, when it is 50% hot, remove the pot from the heat, and wrap the net oil roll sections one by one with egg foam paste (to be round and even) into the pot. Then move the pan to medium heat, fry until beige, drain the oil and plate, remove the sugar and serve.
