When it comes to Yunnan cuisine, the first thing that comes to mind is the rice noodles across the bridge.

Bridge rice noodles are the daily diet of Yunnan people, and there are "bridge rice noodles loved by everyone" in the "Eighteen Monsters of Yunnan". In 2014, the rice noodle making technique of Mengzi Bridge was included in the fourth batch of national intangible cultural heritage representative projects.

Many folk delicacies are accompanied by a folklore. According to legend, there is a small island in the heart of the lake in the south of Mengzi City, and there is a scholar in the county town, Mu Qiqingjing, so he went to the island pavilion to read and prepare for the exam. One day, the wife specially boiled chicken soup, and put the chicken nuggets and rice noodles together in the jar to send to her husband. Walking to the bridge, the wife fainted due to excessive fatigue, and when she woke up, she did not know how long it had been, so she rushed to her husband's study. When I got to my husband and opened the lid, the chicken soup in the jar was still very hot, and it turned out that the chicken fat covered the soup and played a role in keeping warm. A tender heart to send meals, the husband was moved to study hard, and the final gold list was titled. After the good story spread, everyone followed suit, because the wife had to go through a long lake bridge to reach the island when delivering food, so this way of eating was called "bridge rice noodles".

Since its birth, the bridge rice noodles have been over the past three hundred years, from "a corner of southern Yunnan" to "Yunnan famous food", and won the reputation of "not tasting the bridge rice noodles, vainly going to Yunnan". Looking at the rice noodles across the bridge, you will feel that this is a compliment to the abundance of Yunnan products. In the local area, the quantifier used in the bridge rice noodles is "one set", not "one bowl", and the "set" bridge rice noodles are composed of three parts: broth, ingredients and rice noodles. Soup is the essence, what materials to use for a pot of broth, how many hours to boil, are all methodical. The most common broth must also be carefully boiled for five or six hours with ingredients such as hens and pork bones to "cultivate into positive results". When served, the soup should be kept above 95 °, and the bowl should be blanched with boiling water to ensure that the soup does not cool and thus cook the ingredients.

Ingredients consist of meat plates, vegetarian plates, and various condiments. The meat plate is divided into raw plate and cooked plate, the raw plate includes tender and easy-to-cook pork tender pork tender, waist flower slices, sashimi, quail eggs, etc., and the cooked plate includes crispy, chicken wings, pork belly and so on. Vegetarian plates vary according to seasonal changes and market supply, the key is to be fresh, mainly bean sprouts, tofu skin, pea tips, grass sprouts and so on. Rice noodles are made of high-quality rice as raw materials, which are processed by soaking, washing, refining, filtering, steaming powder, extrusion and other processes, and are made of fine white, tender and sticky.

A set of bridge rice noodles, large bowls and small bowls, seven plates and eight plates, red, white, yellow and green, a variety of things, so it is not lively, no wonder some people call it "the next bowl under the heavens". This "bowl under the heavens" is a bowl that travels all over the world, and it is also a bowl that accommodates all kinds of ingredients in the world, and the ordinary food of ordinary people has a luxurious and rich atmosphere. Soup, meat, vegetables, rice noodles, and a variety of ingredients are a combination of fusion and convergence, which is both pleasing to the eye and fragrant, which is a double satisfaction of sight and taste.

After eating bridge rice noodles, pay attention to "long-term hot, long-term cooking, but also more delicate aftertaste". When eating, the sea bowl is filled with soup and added in order. The raw ingredients are first added to the soup, then the fresh vegetables are added, and depending on the taste, they can also be served with chili oil, sesame oil and various side dishes. Rice noodles are clearly rooted, meat and vegetables are available, oil is not greasy, and the appetite for eating is wide open, and even the mood is clear.

Guo Moruo praised the rice noodles across the bridge, calling it "a magnificent camellia in Yunnan food". Camellia is the provincial flower of Yunnan, and the rice noodles across the bridge may be called the "provincial food" of Yunnan. Camellias don't seem to match the bridge rice noodles, but if you think about it, they are really spiritually connected, the same rustic, sincere, warm, and bright.
