
Ingredients: 200 g of fresh chanterelles, 10 g slices of Spanish ham, 1 egg, 3 slices of toast, 30 g of onion, 1 tsp of chopped chives
Seasoning: 2/3 tbsp whipped cream, 1/2 tsp salt, 2/3 tbsp butter Preparation Method:
1. Cut the stem of the fresh chanterelles with a knife, remove the sediment, wash it with water, blanch it in a pot of boiling water for 2 minutes, remove it and put it in cool water to cool, and squeeze out the water.
2. Peel the onion and cut into strips; beat the eggs into a bowl, add the whipped cream and chopped chives and stir well; slice the Spanish ham slices into small pieces.
3. Heat the butter until boiling, add shredded onion, chanterelles and sliced ham, add salt, sauté over medium heat for 2 minutes until oil is full and cooked thoroughly, remove from heat
4. Pour in the mixed egg mixture and scramble the eggs at residual temperature until just cooked.
5. Serve on toast.
Production tips
1. When frying chanterelles, pay attention to the fire not too strong.
2. Immediately after turning off the heat, pour in the egg mixture and fry it at residual temperature until it is just cooked. If the egg is heated for too long, it will lose its smooth and tender taste.
