(1) Long beans
Carob is a vegetable with a long fruiting period and a very high yield. When I was a child, every time I went to the vegetable garden to pick beans, I had to pick dozens of pounds at a time.
A small portion of them are eaten freshly, mostly made into pickles or dried beans.
Drying beans is very simple, basically learned. The beans were picked back and washed. Remove some worm-eyed, elderly ones, and then pinch your head and tail.

Then put it in a pot and blanch it for a while, remembering that it is not cooked and blanched for a few minutes, and then fished out, drained, you can put them on the dustpan, or dry on the floor until it is dried.
(2) White pepper
It is estimated that many outsiders do not know that peppers can also be dried and eaten, but this is not directly dried. If the pepper is directly dried, it can only be processed into a dried pepper.
And this white pepper is actually similar to the preparation method of dried beans. Some green peppers are picked, then washed, put in a pot and boiled for a few minutes, and then fished out to dry.
When the pepper is white, take it home and cut the tail of it with scissors, salt it for half a day, and continue to take it to the balcony outside to dry. You can dry it directly, or you can dry it to 70% or 80%, and then put it in a jar for preservation, so that it will not be bad for half a year.

When it is 70% or 80% dry, take it back and wash it with water. You can then put some salt to marinate, or stir it with the chopped peppers, put it in a jar, and eat it after a few days.
(5) Winter melon
The size of the winter melon is large, and the yield is also very high, and one will be enough for a family to eat for several days.
When I was a child, I planted a lot of winter melons in my home, and the winter melons that could not be eaten would be dried and saved until winter, or eaten again in the spring next year.
And winter melon is not difficult at all to dry. After peeling the fresh winter melon, use a knife to cut it into thick and even strips, or slices. Then take it to the sun for two or three days, generally when the winter melon production area is dehydrated, it can be taken home to seal and preserve.
When you want to eat, take it out and soak it in water for a while, and when the bubble is soft, you can use it to stew meat, or drink soup. This tastes better than fresh winter melon.
