(2) Good sealing: microorganisms are the main reason for food spoilage, as a food preservation container, it must have reliable sealing performance, so that food sterilization is no longer caused by external microbial contamination and deterioration.

(3) Has good corrosion resistance: because the canned food has certain nutrients, salts, organic substances, etc., it is easy to decompose in the process of high temperature sterilization, thereby exacerbating the corrosion of the container, in order to ensure that the food can be stored for a long time, the container must have good corrosion resistance.

(4) Carrying and using: it should have a certain strength and be easy to transport.

(5) Suitable for industrial production: In order to improve production efficiency, reduce costs and stabilize quality, canned food should be able to withstand various mechanical processing in the production process, and adapt to the requirements of factory mechanization and automated production.

Third, the purchase of canned food should pay attention to product packaging and observe the product form

Because canned food has metal packaging, glass bottle packaging, flexible packaging and other packaging forms, and a variety of types, so in the purchase of canned food from the appearance, packaging, sensory quality, label, brand and other aspects to judge the quality of canned food quality. The normal metal can should be complete in shape, not deformed, not damaged, no rust point, and the bottom cover should be concave inward; the center of the metal cap of the glass bottle can should be slightly downward concave, and the contents of the bottle should be complete, the soup should be clear, and there is no impurity. On the contrary, it is not suitable for purchase.

In addition, 1, the expansion of the product should not be eaten: the expansion of the tank refers to the phenomenon of expansion and bulge at the bottom and top of the tin can, which is one of the manifestations of the deterioration of the can. The reason for the expansion of the can is that the sterilization of the can is incomplete, and the food inside is contaminated by microorganisms. Fourth, if the canned food that has been opened can not be eaten at one time, it should be properly stored

After the can of meat is opened, if it cannot be eaten at one time and the remaining cans are not stored correctly, it will cause a large number of microorganisms to multiply and cause the cans to deteriorate. Once the cans of fruits and vegetables are opened, if the tinplate material is used, the tinplate is easy to oxidize after encountering air, which will destroy the vitamin C in the food.

Therefore, once the canned meat or fruits and vegetables are opened, if they cannot be eaten at one time, the remaining canned food should be poured into enamel, ceramic or plastic food containers, sealed with plastic wrap for temporary storage, or stored in the refrigerator, but need to be eaten as soon as possible.

Sugar sauce and jam cans can not be eaten at one time, you should cover the mouth of the can or pour into other containers, sealed with plastic wrap, and eaten in 2 days to 3 days (autumn and winter can be stored for a few days), because the sugar content of such cans is generally 40% to 65%, with antiseptic effect, not easy to deteriorate. When such cans are stored, the cans can be covered and ensured to be sealed as much as possible, or poured into other lidded containers and stored in the refrigerator and refrigerated room, but should not be stored for a long time.

1. Canned meat
