Ullier is best known for Jean-Pierre Jeunet's film Mathilde – Great Love. In 2005, he won the César Award for Best Young Actor for his role in the film.
In 2007, he played the role of young Hannibal Lecter in Peter Weber's Rise of Hannibal, which received international attention.
Ullier's award-winning role as the young Yves Saint Laurent in Saint Laurent directed by Bertrand Bonello won the Prix Lumières Award for Best Actor.
