1. Make batter
Let's start with a large bowl of crispy paste. Pour the flour and starch into a bowl in a 3:1 ratio. Beat another egg, add the right amount of beer, and stir well.
Tips: Adjusting the batter is the key, we use beer instead of water to adjust the batter, so that the fried eggplant box, the appearance is crisp and not easy to return to soft.
2. Make the minced meat
We chop the pork into minced meat (if possible, you can use a meat grinder instead), and the green onion is chopped in an appropriate amount. Place the pork filling and green onion in a bowl. Then add the appropriate amount of five-spice powder, salt, chicken essence, soy sauce, cooking wine and marinate it for a while.
3. Make an eggplant box
We wash the eggplant, cut it into slices about 1.5 cm thick with a knife, and then use a knife to make a deep opening from the side. Open the mouth wider, make sure you can stuff the meat filling inside, and don't open it completely. Then, we stuff the sliced eggplant into the minced meat.
4. Fried eggplant box
Fill the pan with cooking oil, and when the oil temperature rises, fill the eggplant boxes one by one with batter and fry them in the frying pan. After frying, remove the eggplant box and raise the oil temperature again. We put the fried eggplant box into the pan and go through the oil again, then quickly fish out the eggplant box and put it on the plate with oil control.
Tip 2: The oil temperature of the fried eggplant box is the key. We must wait until the oil temperature rises before frying. If the oil temperature is too low, the fried eggplant box will be very greasy. When you can see that the oil in the pan begins to smoke slightly, you can fry the eggplant box. After frying, it is re-boiled in oil to make the eggplant box more crispy.
