Start production:
1 Wash the eggplant and cut into large round slices about 1 cm thick.
2 Finely chop the ginger, chop the green onion, slice the garlic, chop the peppers, wash and chop the parsley.
3 Add chopped green onion and part of minced ginger to the minced meat filling, mix with cooking wine, soy sauce and half salt and marinate for 15 minutes.
4 Spread the eggplant slices flat and add the marinated meat filling, cover with another eggplant slice and press slightly.

8 Add vinegar, sugar and remaining salt and stir well, then add water starch to outline and bring to a boil, that is, into a fish sauce.
9 Pour the fish sauce over the fried eggplant box and sprinkle with green onions.
Tip: The cut eggplant can be soaked in salt water for a while so it doesn't turn black. When frying, it is recommended to put more oil in the pan, and the fried eggplant box is fragrant and crispy, and it is not easy to fry.
