
1. Prepare the ingredients
2. Cut off the shrimp, pick out the shrimp line at the third and fourth sections of the shrimp, wash them, and marinate in cooking wine for about 10 minutes
3. Cut the green onion into sections and slice the ginger and set aside
4. In a small bowl, add 1 tsp light soy sauce, 1/2 tsp vinegar, 1 tsp sugar, 2 tsp water, 1/2 tsp starch and mix well

6. Sauté the chives and ginger in the oil
7. Pour in the seasoning
8. Add the shrimp, stir-fry evenly, simmer for 3 minutes on medium-low heat, and finally collect the juice on high heat, add salt and chicken essence
