1: Slice the yellow beef and set aside.
2: Marinate the cut beef in white pepper, salt and cooking wine for 10 minutes.
3: Remove the celery leaves, wash, cut into sections and plate for later.
4: Cut the pickled pepper into sections, millet pepper into sections, shredded ginger, crushed garlic, chopped green onion, and plated for later.
5: Wash and dry the pot, pour in the appropriate amount of oil, when the oil temperature is 70%, pour in the marinated yellow beef, quickly stir-fry until it changes color and then fish out.
6: Put the stir-fried beef on the plate and set aside.
7: After fishing out the beef, pour in the ginger and garlic and stir-fry evenly.
8: Stir-fry ginger and garlic until slightly yellow, pour in millet pepper and pickled pepper, stir-fry evenly, and then pour in the appropriate amount of pickled pepper water.
9: Stir-fry the pickled pepper thoroughly to taste the aroma, pour in the spare yellow beef and stir-fry evenly.
10: After the beef is stir-fried evenly, pour in the celery segments, drizzle with soy sauce and continue to stir-fry.
11: Finally, add an appropriate amount of oyster sauce, chicken essence to taste, stir-fry evenly, sprinkle with green onion, and immediately put on the plate.
