Step 1: Make pastry.
Add 50ml of water to a bowl, add 80g of maltose, stir well and set aside.

Step 2: Make leather noodles.
30 g flour, add a handful of cooked sesame seeds, add 15 ml of water, 10 g cooking oil and knead into a soft dough. In this way, the leather surface is ready, and it is also relaxed for 20 minutes.
Step 3: After 20 minutes, take out the pastry and roll out into a square piece with a thickness of about 0.5cm.
Remove the dough and roll out into slices the same size as the pastry.
Place the rolled pastry on top of the noodles, then turn them over so that the skin faces up, and roll them out again to make the two noodles stick more firmly and avoid separating when fried.
Cut into long strips of about 3 cm.
Cut the long strip over, cut into small squares, do not cut the first three knives, and then cut off when the fourth knife.
Step 4: Fry.
Put the oil in the pan, heat the oil for 40% of the heat, put it into small cubes and fry, fry until golden brown and cook through, and then fish out.
Step 5: Wrap the sugar solution.
Add 80ml of water, 50g sugar, 80g maltose to the pot, simmer over low heat to make large bubbles, pour in the fried dough pieces, quickly stir well, and then sprinkle a handful of cooked sesame seeds to add flavor. Cover a lid and simmer for more than two hours until the sugar solution is fully absorbed before eating.
