Shandong Linqing has a kind of snack that is particularly famous, called "pallet tofu". It is the small vendor who loads the freshly made tofu piece by piece, and then stacks a pile of narrow and thin wooden boards that are more than two inches wide and more than ten inches long, just like the wat boards used by the ancient scholars and doctors when they went to the court. Use a tricycle or "electric donkey" to pull to the intersection of the city and where there are many people, and sell it for 2 yuan a board.
When a diner comes to buy it, the vendor will use a knife to cut out a large piece of tofu, put it on a wooden board and chop it a few times. Hands on the guest. Because tofu is very tender and soft, diners must hold the wooden board with both hands when eating, bend over and pinch their stomachs to eat it, or it is called smoking.
Therefore, in Linqing eat "tofu on the board", also known as "tofu with belly".

Tofu is an authentic Chinese food, and since Liu An, the king of Huainan, invented tofu during his alchemy, this dish has been passed down on the tables of Chinese. Linqing people manage to eat tofu on the board called "drinking tofu", advocating that it is not added any seasoning, directly into the mouth

Tofu is a local delicacy, and the stall owner cuts the tofu and places it on a rectangular plank. Then cut into several pieces with a knife and diners can eat them on the spot.
As the saying goes: you can't eat hot tofu in a hurry. But this tofu is more delicious the hotter it is. And only by "drinking" while it is hot without seasoning can you taste the fresh bean flavor of tofu even more.
Regarding the origin of the pallet tofu, there is also an interesting legend in Linqing -
Legend has it that in the Ming Dynasty, there was a xiucai who entered Beijing to take the exam. The family was very poor, and it was difficult to get some silver to make a coil. Along the way, I saved money and money, but when I came to Linqing, I ran out and had to spend the night on the street.
Early the next morning, a vendor named "Tofu Lee" came carrying a prepared tofu. When he saw Xiucai lying on the street, he put down his pick and pushed Xiucai awake, only to know that the other party had not eaten for two days.
Hearing this, "Tofu Lee" took out a few pieces of water tofu and put them on the wooden board, chopped them with a knife, and let Xiu Cai eat...
Later, this show only passed the examination, served as the inspector of the Eight Provinces, and returned to Linqing to thank the benefactor.
Since then, the white, tender, warm and delicious "tofu on the board" has spread in Linqing and has been followed to this day.
